The vegan carrot cake recipe which will be served on the Holistic Holiday at Sea cruise has been adapted for individual use and is below:
Holistic Holiday At Sea Galaxy Carrot Cake
Cake Ingredients:
- 3 cups spelt flour
- 1 Tlb. Baking Soda
- ¼ tsp. Sea Salt
- 1 tsp. cinamon
- ½ tsp. nutmeg
- 3 cups grated carrots
- ½ cup chopped walnuts
- ½ cup raisins
- 2/3 cup refined safflower oil
- 1 cup maple syrup
- 1 tsp. vanilla
- ½ cup non dairy milk (soy, rice or nut)
- 1 Tlb. Lemon zest
- Juice of one lemon
Frosting Ingredients:
- 8 oz. Galaxy Vegan Classic Plain Cream Cheese
- 4 Tlb. Non hydrogenated margarine
- 2/3 cup agave syrup
- 2 tsp. lemon zest
- ½ tsp. vanilla extract
Directions:
Preheat the oven to 350° Fahrenheit. Oil and flour a 9-inch springform pan and set aside. Sift together the flour, salt, baking soda and spices. Add carrots, nuts and raisins. In a separate bowl whisk together the oil, maple syrup, non dairy milk, vanilla, lemon juice and zest. Add to the flour mixture and stir well. Pour into the prepared pan.Bake for 45 to 60 minutes, or until a toothpick inserted into center of the cake comes out clean. Cool for 20 minutes before removing sides of cake pan. Cool completely and then frost.To create the frosting, cream the margarine and Galaxy Vegan Cream Cheese together then add remaining ingredients.Galaxy Nutritional Foods Vegan® Cream Cheese Alternatives are sold in natural food and health food stores.
