2 boneless, skinless chicken breasts
2 slices thick-cut ham
6 Veggie Slices Swiss Flavor (or simply substitute the Veggie Slices with your favorite Galaxy product)
¼ cup breadcrumbs
1 egg yolk
1 teaspoon kosher salt
Non stick vegetable oil spray as needed
Preheat oven to 375 degrees.
Carefully cut the chicken breast so that you can open it like a book from the side or ask your butcher to butterfly them for stuffing.
Lay the chicken breasts in front of you open, so you can stuff them. Place a slice of ham down on each and then 2 Veggie Slices.
Roll or fold the chicken breasts up so the ham and Veggie Slices are on the inside. Season with kosher salt on the outside.
With a brush, apply egg yolk on the surface of the breast. Place the remaining slice of Veggie on top of the egg washed breast. Brush the surface of the cheese with the egg wash again and then sprinkle breadcrumbs over the surface to cover the egg wash and chicken surface completely.
Spray the chicken with vegetable spray as needed and place on a baking sheet or pan. Place in the oven and cook until the middle is cooked through or registers 165 degrees on a thermometer. It’s ok if some of the Veggie Slices come out from the middle.
Let rest for 8 minutes to allow the middle to set.
Chef’s Option: Use seasoned or plain Panko breadcrumbs for a crunchier chicken breast.
