Makes 10 Serving(s)
3 cups pasta shells, uncooked
3 carrots, sliced (I use a potato peeler, much easier)
3-3/4 cups broccoli florets
1 small red bell pepper, diced
1 small red onion, minced
1 7-ounce can whole kernel corn
3 tablespoons olive oil
4 cloves garlic pressed (I buy it minced in the jar, less messy, quicker)
2 teaspoons basil
Salt and pepper to taste
6 ounces Veggie Shreds Mozzarella Flavor (or simply substitute the Veggie Shreds with your favorite Galaxy product)
Prepare pasta according to package directions; drain and set aside. Meanwhile, steam the carrots and broccoli just until tender, about 4-5 minutes. Place the vegetables in a large bowl, along with the bell pepper, onion and corn. Add remaining ingredients and mix well. Add pasta to bowl and toss lightly.
