16 ounces egg substitute
1 cup 1% milk
1 bunch broccoli rabe, bottoms trimmed, steamed
2 links vegetarian or vegan Italian sausage, roasted or grilled
1 tablespoon minced garlic
4 ounces Veggie Block Provolone Flavor, cut into 1/2” cubes (or simply substitute the Veggie Block with your favorite Galaxy product)
½ teaspoon crushed red pepper (optional)
1 teaspoon kosher salt
Nonstick vegetable spray, as needed
Preheat oven to 375 degrees.
Cut the broccoli rabe and vegetarian/vegan sausage into bite-size pieces. Set aside.
Pour the egg substitute into bowl. Add the milk, salt, garlic, and crushed red pepper (black pepper may be substituted). Whisk until evenly incorporated.
Spray an oven safe 9” bowl or 8” X 8” pan with veggie spray covering all interior surfaces. Place broccoli rabe, vegetarian/vegan sausage and Veggie Provolone into the pan.
Pour the egg mixture over the top of the vegetarian/vegan sausage and rabe, making sure to leave at least ½” of space at the top of the pan, as the mixture will expand slightly when cooking.
Place bowl or pan on a cookie sheet (to prevent spillage), place in the oven, and bake until the mixture is set in the middle (about 30 minutes). Finish under the broiler for approximately 35-60 seconds to brown lightly and improve flavor.
Let sit for 10 minutes. Release the edges with a paring knife.
To Serve: Cut into wedges or pieces and serve out of the pan, or place a plate or platter on top of the pan. Carefully flip upside down and tap the bottom of the dish to help release the frittata. Remove bowl or pan.
Optional: Sprinkle Veggie Grated Topping Parmesan Flavor over the top of the frittata right before placing under the broiler.
