Makes 5 - 6 Servings
1 small bag tortilla chips, whole wheat or baked
½ Vegan Block Cheddar Flavor or Rice Vegan Block Mozzarella Flavor, shredded
1 small can black olives, sliced
½ small onion, diced
2 medium tomatoes, diced
½ bunch cilantro, chopped
Jalapeno peppers, thinly sliced (optional)
Preheat oven to 375 degrees.
Spread tortilla chips on a cookie sheet or sheet pan evenly. Sprinkle the shredded Pepper Jack evenly over the chips.
Top with the onions, tomatoes and jalapeno peppers. Place in the oven and bake until the Pepper Jack is melted, about 12 minutes.
Remove from oven and top with chopped cilantro and sliced olives. Serve immediately.
