A Real Scoop: Galaxy Nutritional Foods Announces Dairy-Free Ice Cream Recipe Contest

North Kingstown, Rhode Island — July 18, 2012 — Want to cool down this summer with ice cream? For the millions of Americans living with milk allergy, lactose intolerance or for those who choose a vegan lifestyle, ice cream – a common summer treat– may be off limits. The call for entries for Galaxy’s Dairy-Free Ice Cream Contest is open July 18, 2012, through August 15, 2012. Here’s how to enter:

Galaxy’s Dairy-Free Cheesecake Ice Cream recipe was created by Alisa Fleming, founder of GoDairyFree.org and author of Go Dairy Free: The Guide and Cookbook for Milk Allergies, Lactose Intolerance, and Casein-Free Living. She will also help judge the entrants. GoDairyFree.org is the number one online resource for dairy-free living, which provides daily updates including recipes, product reviews, cooking tips, and food news.

The grand prize for the Dairy-Free Ice Cream Recipe Contest is a Cuisinart Ice Cream Maker, six 8 oz. tubs of dairy-free Veggie Cream Cheese Alternative, a Wilton Ice Cream scoop and the winning recipe featured on on GoDairyFree.org. Five finalists will be selected from all submitted entries. At that time, each of the five finalists will be asked to provide their recipe for judging and the grand-prize winner will be chosen. The four runner-ups will also receive a Wilton Ice Cream scoop and a coupon for a free 8 oz. container of Galaxy’s Veggie Cream Cheese Alternative.

Galaxy Nutritional Foods Dairy-Free Cheesecake Ice Cream

Creamy cashews and rich cream cheese alternative make an amazing base for ice cream. To get a little extra cheesecake tang, add a dash of salt and generous squeeze of lemon. Feel free to adjust the lemon juice to taste.

Ingredients:

  • 3/4 cup raw cashews
  • 8 ounces Galaxy Classic Plain Veggie Cream Cheese Alternative (dairy-free and vegan)
  • 1 cup water, soymilk, or coconut milk beverage, divided
  • 3/4 cup sugar
  • 2 to 3 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • Place the cashews in a spice grinder or food processor, and whiz for 30 seconds, or until powdered.

    Add the ground cashews, cream cheese alternative, 1/2 cup of the water or milk alternative, sugar, lemon juice, vanilla, and salt to a blender or food processor, and mix on high for 1 to 2 minutes, or until well blended.

    Place the blender jar in your refrigerator, and let the mixture chill for 2 hours.

    Make sure the canister or your ice cream maker was frozen overnight. Once frozen, and add the mixture to your ice cream maker according to the manufacturer’s instructions.

    When done, you will have some tasty soft serve. Pack it into a freezer safe container, and chill in the freezer for several hours to get hard packed ice cream.
