Cheesy Farro with Kale

Ingredients
- 2 cups farro
- 1 tablespoon olive oil
- 1 leek, white only, halved and thinly sliced
- 3 cups of kale, chopped
- 1 ½ cups GO Veggie! Lactose Free Cheddar Shreds
- ¼ cup GO Veggie! Dairy Free Grated Parmesan Topping
- Salt and pepper to taste
Instructions
In a medium saucepan, combine farro with 4 cups of water.
Bring to a boil then reduce the heat to low, cover and simmer for 15-20 minutes or until tender. Strain.
In a medium sauté pan, over medium high heat, add the oil and leeks and sauté for 5 minutes or until tender.
Add the kale, season with salt and pepper, and cook for 3-5 minutes.
Add the farro and cheese. Cook for 2-3 minutes to combine and met cheese.
